Watermelon and Feta Salad

I make many versions of this salad because I love the flavor combination, it has everything, sweet, salty, acid, and bitter. This is the easiest version and a great compliment to a spicy meal.

For the Salad:

Baby arugula, washed

Cubed seedless watermelon

Feat cheese crumbled (Buy it whole and crumble it yourself, its cheaper and has more flavor and moisture)

Fresh mint, finely chopped

For the Dressing: (enough for 2 side salads)

1T extra virgin olive oil

1T champagne vinegar

1/2 t sugar

1 t fresh chopped mint

Whisk together and pour over salad right before serving
