Easy comfort food with a kick !

Homemade Spicy Sloppy Joes

2 lbs ground beef (use turkey or chicken if desired)

1/2 c chopped yellow onion

1/4 c chopped green pepper

2 t minced garlic

1 12 oz bottle of chili sauce ( I used Heinz)

1 6 oz can tomato paste

2 T Worcestershire sauce

2 T hot sauce

1/2 t salt

1/4 t cayenne pepper

1/2 t dried oregano

1 t mustard

1/2 c water

Brown ground beef with onions peppers and garlic over med high until meat is cooked through. drain off excess fat or liquid if needed. add chili sauce, tomato paste, Worcestershire sauce, hot sauce, salt, cayenne, oregano and mustard, stir to combine and heat through, add water and stir. Turn heat down to low and cook for about 10 minutes. Serve on toasted buns, add arugula and shredded cheddar if desired.

1 1/2 lb london broil

1 c diced tomatoes ( I used canned)

1 t salt

1 t cumin

1 t chopped garlic

1/4 t cayenne pepper

1 lime juiced

Put london broil in a gallon sized ziplock bag, add remaining . Close bag and mix and massage marinade into meat with your hands. Place bag in refrigerator for 6-24 hours, turning occasionally. Preheat oven to 450. Place meat and marinade on a baking sheet, add sliced peppers and onions if desired.

Cook for about 15 minutes, then turn on broiler and cook for 5 minutes more per side ( use a meat thermometer to check doneness, cooking time will depend on thickness and weight of meat)

Let rest 10 minutes and then slice thinly against the grain. Great by itself or served in tortillas.

Moroccan Spiced Pumpkin Chili

 

Get out the spice rack, this thick and satisfying chili has a great depth of flavor, warm, hearty, earthy and spicy. Perfect for Halloween night or any fall dinner, serve  it with naan or couscous.

Moroccan Spiced Pumpkin Chili

1 1/2 lbs ground beef or lamb

3 tbsp hot curry powder

1/4 t ground cloves

1/4 t cardamom

1/4 t cayenne pepper

1/4 t cumin

1/4 t nutmeg

1 T cinnamon

1 T honey

1 T tomato paste

4 garlic cloves chopped

1 c yellow onion chopped

1 150z can of pumpkin

1/2 c chopped dried apricots

14 oz can peeled tomatoes and juice

2 cups small gold potatoes quartered (or bite size)

3-4 c beef broth

salt to taste

In a large heavy pot brown ground beef over med high heat until cooked through, add, all the spices, tomato paste and honey, stir and cook 1 min, add garlic and onions, cook 2-3 minutes more, stirring constantly.

 

Add pumpkin, apricots, tomatoes and potatoes, stir, add broth and bring to a boil, cover and reduce heat. Cook for 20-30 minutes or until potatoes are tender.

 

 

 

Simple Summer Flavor: Grilled Chicken and Vegetables with Lemon Mint Yogurt Sauce

Let’s admit it, simple, clean flavors are the best. Especially in the summer when produce is at its peak. This uncomplicated dish sings Summer and lets the true flavor of the food shine through. Delicious, filling and healthy, the chicken and vegetables are kicked up with the acid of the lemon, the freshness of the mint and a subtle kick from cayenne. Perfect for a Labor Day cook out or any day of the week.

Grilled Garlic Lemon Chicken and Vegetables

3 lbs of chicken ( I used boneless skinless thighs and breasts)

4-5 T olive oil

1 lemon juiced

1 T garlic

1/4 t cayenne pepper

salt and pepper

2 zucchini sliced in 1 inch rounds

2 cups eggplant cut in 1 inch chunks

2 sweet yellow onions halved

2 red bell peppers cut into 2″ x 2″ chunks

Combine 2 T olive oil, lemon juice, garlic, and cayenne pepper in a small bowl. Lay chicken in a shallow baking dish and por marinade over chicken using , tongs to turn chicken so it is coated on all sides. Sprinkle with salt and pepper and refrigerate covered for at least 20 minutes.

Meanwhile chop vegetables and place in a large bowl, add 2-3 tablespoons of olive oil and toss to coat, add salt and pepper .

Thread on skewers. I like to do each skewer with an individual vegetable so they cook evenly since different vegetables have different cooking times.

Preheat Grill and place chicken and veggie skewers on grill.

Cook until vegetables are slightly charred and softened slightly. The onions and zucchini will cook slightly longer.

Cook chicken to preferred temperature or until no longer pink. About 5 min per side.

Lemon Mint Yogurt Sauce

1 cup plain greek yogurt

1 lemon juiced

1t lemon zest

1 t garlic

2 T chopped fresh mint

salt and pepper

Combine all ingredients in a small bowl

Serve with grilled chicken and vegetables

Beet and Carrot Salad with Cilantro

2 c fresh raw beets, peeled and shredded

2 c matchstick or shredded carrots

2 T honey

1t salt

3 T olive oil

juice from 2 limes

1/4 t pepper

1/2 t cayenne pepper

1/4 chopped fresh cilantro

in a small bowl whisk together honey, lime juice, olive oil, salt, pepper and cayenne pepper, set aside. In a large bowl add carrots, beets, and cilantro. Toss together. add dressing and stir

Andouille Sausage and Peppers over Smoked Gouda Cheese Grits

It’s been a week of go to, easy favorites for dinner in our house. We have graduations, birthdays, and baby showers to plan, not to mention Memorial Day. My kids are not huge seafood fans so this is a nice alternative to the classic shrimp and grits which I regularly crave. It is super quick and easy, yet filling and comforting.

5 links andouille sausage ( you could use Kielbasa if you don’t like the spice or the spice doesn’t like you ) sliced on the bias into bite sized rounds

1 green pepper sliced into thin strips

1 small yellow onion sliced

Saute the sausage in a large skillet for about 3 minutes, add onion and peppers and continue cooking over med heat until they are soft and sausage is cooked through.

Meanwhile cook 4 servings of Quick grits (not instant) according to package directions.

Add the following to the cooked grits:

2 T butter

1/2 c of milk

1 clove of minced garlic

2 cups shredded smoked gouda cheese

1 cup shredded sharp cheddar cheese

1 t cayenne pepper

1/2 t salt

1/4 black pepper

Stir to combine, add more milk if needed

Add grits to serving bowls and top with sausage and pepper mixture.
