Today I am wearing heels in the kitchen, special occasion? ┬áNo, but 15 months after knee surgery I still look like a 10 year old trying to walk in her mom’s shoes. I am sick of flats, and flip-flops, I want to wear grown up shoes, after all I love shoes and there are too many pairs of heels to count, in my closet, just collecting dust. Maybe I am over thinking it, so I figured if I put them on while I was busy in the kitchen I would forget about the awkwardness and just walk in them. Well, I think it was slightly helpful, next step mopping and gardening in heels, the neighbors (and my family) may think I am crazy but I am getting back in my shoes!

Oh and I made these delicious cookies today, oatmeal, peanut butter, banana and chocolate chip. So obviously I named them Elvis cookies, thank you, thank very much.

Elvis Cookies: Oatmeal, peanut butter, banana and chocolate chip

1 1/2 c flour

1 c sugar

1/2 t salt

1/2 t baking soda

1/2 c butter softened

3/4 c peanut butter

1 egg

2 bananas mashed

1 1/2 c old fashioned oats

1 c mini chocolate chips

Preheat the oven to 350 degrees. Add flour, sugar, salt, baking soda, butter and peanut butter to a large bowl. Beat on low until ingredients are combined and the mixture starts to crumble. Add egg, bananas and oats, mix until it forms a dough, stir in chocolate chips. use a med ice cream scoop or a heaping tablespoon and place dough on cookie sheets.

bake for about 18 minutes or until edges brown and cookies are slightly golden. (my oven is on the slow side so check after 14 minutes)

Let cool and enjoy! Makes about 4 dozen

Peanut Chocolate Chip Bars : A Carnival in Your Mouth

 

Book Club Time, and it is Halloween Book Club so that’s always twice as exciting. This month’s host picked Something Wicked This Way Comes by Ray Bradbury.

A frightening tale about a sinister carnival. A perfectly spooky book for a perfectly spooky party. Costumes were required. I took the easy route and was a Barker (ok I really looked like a ringmaster, but those are only in circuses) This was an easy costume, fake mustache, top hat, vest, bow tie, jacket, and some boots, I already had all of those in my costume box (yes I am a grown adult with a dress up box, I think all adults should have them)

 

So now I need food, I wanted to do something with a carnival feel so I thought these easy bar cookies would fit the bill since they have caramel and peanuts. They are easy to make and very portable, perfect for book clubs or parties. They were such a hit I made them again for a Halloween party the next day.

Peanut Chocolate Chip Bars

2 tubes of refrigerated sugar cookie dough

3 cups salted peanuts

2 1/2 cups chocolate chips

1 cup caramel sauce (ice cream topping)

Preheat oven to 350. Roll out sugar cookie dough onto a large sheet pan, using a rolling-pin sprinkled with four. I used a nonstick liner to make them easier to remove later. I also used a knife to cut straight edges after I rolled it out.

 

Bake dough in oven for about 12 minutes or until it is slightly golden, dough will still be soft in the middle.

 

Sprinkle the top with peanuts and chocolate chips. Then drizzle caramel sauce over the top.

 

Return them to the oven and bake for 12-15 minutes longer or until cookie dough is firm and center begins to bubble. Let cool and cut into bars

Going for the Gold: Olympic Fruit Tart

Hosting an Olympic themed party, try this cute and festive dessert, you may take home the gold.

Olympic Fruit Tart

2 packages of dry sugar cookie mix

1 80z tub Cool Whip

12 oz cream cheese softened

1 t vanilla extract

2 T sugar

1 cup apple jelly

about 1/2 c each of:

Raspberries, Blackberries, Pineapple, Blueberries, and Green Grapes

Mix up sugar cookie dough according to package directions, spread into a large rectangular cookie sheet sprayed with non stick spray. Cook for about 15 minutes or until cookie is golden brown. Remove from oven and let cool. Flip cookie onto a large flat board or platter (you can leave in pan if desired). To make frosting, combine cool whip, cream cheese, vanilla and sugar in a large bowl, I used my kitchen aid mixer with the paddle attachment, you could use a hand mixer or food processor. Beat about 4 minutes on high or until no longer lumpy. Spread on cooled cookie.

To make olympic rings use a small bowl and make circular indentations onto the frosting.

Use the fruit to make rings, Chop black berries and grapes in half, and pineapple into small pieces

Melt apple jelly in a small sauce pan over med/low heat and brush over tart with a silicone brush.

Put in refrigerator until ready to serve.
