Orange Glazed Chicken and Vegetable Fried Rice

Either of these recipes are great on their own but they also go great together. Impress your family and make their favorite take out entrees at home. 

Orange Glazed Chicken and Vegetable Fried Rice


Orange Glazed Chicken

1 1/2-2 lbs chicken ( use your favorite cut, thighs, wings, breast but leave the bones in and skin on)

Salt and pepper

1 c orange juice

1 T corn starch

1/2 c ketchup

2 T honey or brown sugar

2 t vinegar

2 T soy sauce

2 t hot sauce

Preheat oven to 450,  place chicken on a baking sheet and sprinkle with salt and pepper,  cook for 20 minutes skin side down, then turn and cook 20 minutes more. Chicken should have crispy skin and be golden brown. ( this is for thighs, cook longer for breasts, shorter for wings). Meanwhile add orange juice and cornstarch to a medium sized sauce pan and whisk together, add ketchup, honey, vinegar, soy and hot sauce and whisk again, bring mixture to a boil over med high heat and then turn to low, whisk mixture until thicken to a glaze consistency. Keep Warm.

Dip cooked chicken into glaze and coat well, place back on baking sheet and place back into the oven for 4 minutes or until chicken starts to get dark spots.

Serve with any remaining orange sauce.

 

Vegetable Fried Rice

4 c cold cooked rice (great for left over rice, or make the day before for best results)

1/4 c soy sauce

1/4 c rice vinegar

1 T sugar

2T oil

2 eggs, beaten

1 1/2 c broccoli florets

3/4 c sliced carrots

1/2 c chopped scallions

2 t chopped garlic

1 T minced ginger

1/2 c frozen peas

2 T chopped basil

 In a small bowl mix together, soy, sugar and vinegar. Heat 1 T oil in a large pan or wok, add carrots, broccoli and scallions, cook 2-3 minutes, add garlic, ginger and peas, cook 2 min more, add cooked rice and soy mixture. stir together and cook over med high heat until all rice is coated and brown, make a well in the center of the wok/pan and add remaining oil and beaten eggs, stir vigorously and then mix with rice mixture until egg is cooked, add basil and stir. Serve.

Heels in the Kitchen: Elvis Cookies

Elvis Cookies: Oatmeal, peanut butter, banana and chocolate chip

Today I am wearing heels in the kitchen, special occasion?  No, but 15 months after knee surgery I still look like a 10 year old trying to walk in her mom’s shoes. I am sick of flats, and flip-flops, I want to wear grown up shoes, after all I love shoes and there are too many pairs of heels to count, in my closet, just collecting dust. Maybe I am over thinking it, so I figured if I put them on while I was busy in the kitchen I would forget about the awkwardness and just walk in them. Well, I think it was slightly helpful, next step mopping and gardening in heels, the neighbors (and my family) may think I am crazy but I am getting back in my shoes!

Oh and I made these delicious cookies today, oatmeal, peanut butter, banana and chocolate chip. So obviously I named them Elvis cookies, thank you, thank very much.

Elvis Cookies: Oatmeal, peanut butter, banana and chocolate chip

1 1/2 c flour

1 c sugar

1/2 t salt

1/2 t baking soda

1/2 c butter softened

3/4 c peanut butter

1 egg

2 bananas mashed

1 1/2 c old fashioned oats

1 c mini chocolate chips

Preheat the oven to 350 degrees. Add flour, sugar, salt, baking soda, butter and peanut butter to a large bowl. Beat on low until ingredients are combined and the mixture starts to crumble. Add egg, bananas and oats, mix until it forms a dough, stir in chocolate chips. use a med ice cream scoop or a heaping tablespoon and place dough on cookie sheets.

bake for about 18 minutes or until edges brown and cookies are slightly golden. (my oven is on the slow side so check after 14 minutes)

Irish Coffee Cupcakes

Irish Coffee Cupcakes

St. Patrick’s Day is one of my favorite holidays, that figures since I am German. However, I always feel a little Irish this time of year, I think we all do. So celebrate and make these delicious Mocha Cupcakes with Bailey’s Irish Cream Frosting.  This recipe makes about 10 cupcakes, double it if you are having the whole family over of a party.

Irish Coffee Cupcakes

for the  mocha cake

1 cup all purpose flour

1 cup sugar

1/4 cup unsweetened cocoa powder

2 T instant espresso coffee crystals

1 t baking powder

1/4 t baking soda

3/4 c milk

1/4 c shortening

1/2t vanilla

1 egg

Preheat oven to 350

Combine all dry ingredients into a bowl. Add milk, shortening and vanilla, beat on med speed for 2 minutes. Add egg and beat 2 more minutes.

Pour into muffin tins lined with baking cups. (I use an ice cream scoop, so that they are all filled evenly) Bake for about 22 minutes or until a toothpick comes out clean.

Let Cool.

Bailey’s Irish Cream Frosting

1/4 c butter softened

2 1/2 c powdered sugar

1 T Bailey’s Irish Cream

2 T milk

Cream butter on low-med speed until smooth, add 2 c powdered sugar and beat until combined. Add Bailey’s and milk, beat until smooth. Add remaining 1/4 of powdered sugar slowly until frosting is desired consistency.

Frost cup cakes and sprinkle with nutmeg or cinnamon if desired.

Chicken Paprika

2lbs Boneless Skinless Chicken Breast

3T Hungarian Sweet Paprika

2 T Olive Oil

1 Yellow Onion Chopped

2 T Sherry

1 28oz can of Whole Peeled Tomatoes

1T Tomato Paste

1/2 c Sour Cream

1T chopped Flat Leaf Parsley

I like to do my prep work before I start cooking, and I try to chop and cut all my vegetables and herbs before my meats to avoid cross contamination. In this case chop your onion and parsley then your chicken last. into about 1″ cubes.

Next  combine the chicken with 2T of the Paprika, this is one of those instances when you should not use the spices from the dollar store. Paprika is the main flavor in this dish so a good quality Hungarian paprika should be used, it has better color and flavor than the cheap brands. Also add 1 T coarse salt and several grinds of black pepper.

Heat 2T of olive oil in a large skillet on med high, cook chicken until browned on all sides

Remove chicken and set aside, reduce heat to medium. Add 1 T oil to pan and saute chopped onion until soft. Add Chicken back into pan and deglaze with 2T sherry, scraping the botom of the pan with your spoon to get up all the bits. Add 1T Paprika and can of tomatoes and their juices and 1T tomato paste bring up to a boil and than reduce heat to simmer.

Use your spoon to break up tomatoes as it cooks. Simmer for about 10-15 minutes until sauce is slightly thickened. Remove from heat and add 1/2 cup sour cream.

Serve over cooked wide egg noodles and sprinkle with fresh chopped parsley.
