3 Ingredient Key Lime Pie Dip

I made Key Lime Pie last week, one of my family’s favorites, and as I was licking the spoon and bowl I had an idea. Why not make this into a dip that I could eat on graham crackers and fruit?  So here it is, tastes just like the pie,I don’t have to lick the bowl anymore and it’s so easy with only 3 ingredients I will be making it all Summer.

Key Lime Pie Dip

1 c sweetened condensed milk

1 c sour cream

1 1/2 T key lime juice

Mix the ingredients together in a small bowl. Garnish with a lime slice and graham cracker crumbs if desired. Serve with graham crackers, apples, strawberries, vanilla wafers etc..

Camping Food: S’mores with Nutella

I apologize about the photos, but we were actually camping. Our family went camping this past weekend at Myakka River State Park, just east of Sarasota, Fl. Packing food that will keep in a cooler for a couple days is always a little tricky, it can be brutally hot here in the afternoon. I made a large batch of chili that we made nachos, chili dogs and quesadillas out of, even considered putting it on our eggs one morning. It was perfect. I also pre baked a bunch of Mojo chicken legs and brought those ( I don’t like to bring any raw meat for fear of cross contamination) They were great for snacks, lunch and dinner, and easy to eat, no utensils needed. But like all good campers we needed to roast marshmallows and make s’mores. I always find that it is hard to keep the chocolate bars from melting in the heat, or if you put them in the cooler they get too hard and won’t melt in the s’mores, so that is where the Nutella comes in. I spread some Nutella on graham crackers and put them on a plate, then as we roasted the marshmallows we put them on top and added a top cracker and pulled the skewers out. Easy and so much less mess than traditional s’mores. I meant to bring bananas to slice and add too but I forgot. Doesn’t matter, they were still delicious. From now on I will be leaving the candy bars at home and bringing the jar of Nutella camping, besides it does double duty on sandwiches, apples and crackers for snacks.

Creamy Reese’s Peanut Butter Dip

Book club time again, this month’s selection was A Visit for the Goon Squad by Jennifer Egan. I liked some of the book, but there were too many characters and writing styles for me to keep up with.  When I got to the power point presentation, I wanted to just skip it, I was reading, why was there what  looks like math in front of me. I was however excited for the chance to pull out my Doc Martens and old 80’s new wave/punk jewelry.  Have I mentioned I am in the best book club in the world, we go all out, costumes, food, etc…

 

This month’s food was a challenge though, 80’s punk rock food….hmmm. Luckily one of the characters, Lou, eats a lot of apples in the book, that was my inspiration. I have made a cream cheese and Heath bar dip for apples in the past but I wanted to put a little spin on it. I decided to switch up the candy and use Reese Peanut Butter cups instead, I liked this dip way more than the book.

2 8oz bricks of cream cheese, softened

1 8oz carton of cool whip

1/4 c brown sugar

1 tsp pure vanilla extract

5 full sized Reese’s Peanut Butter Candy Bars ( a total of 10 cups, 2 in each package)

Add Cream Cheese, Sugar, Vanilla and 3 candy bars (6 cups) to a food processor, pulse until candy is chopped up and ingredients are combined.

CREAMY REESE’S PEANUT BUTTER DIP

Add mixture to a large bowl and fold in cool whip until combined.

Spread mixture into a large glass pie pan or other shallow dish. Chop remaining peanut butter cups and sprinkle on top. Serve with sliced apples, pretzel chips and graham crackers.

Late Night Snack: S’mores Popcorn

I saw an idea for S’mores popcorn on Pinterest but the link was broken so I don’t know who thought of this or who to give credit to. All I know is that I was shopping in my local market and these cute Honeymaid mini graham crackers were on sale, it made me think of the popcorn I saw so I decided to give it a try. The original picture on pinterest used Golden Grahams so if you have those on hand I am sure they would work just fine.

4 cups popped corn

1 1/2 cups mini graham crackers

1 1/2 cups mini marshmallows

1 cup chocolate chips

2 T half and half

Melt chocolate chips and half and half  in a double boiler.

Put graham crackers, marshmallows and popcorn in a large bowl and toss with hands to mix together. using a spoon drizzle chocolate over mixture and stir until it is all incorporated.

Serve immediately. Would be perfect for kids sleepovers, and late night snacks.
