Chicken with Citrus Bernaise and Wilted Spinach

 

 

I am a foodie, I love to make my own sauces and purees but I have a weakness, powdered Bernaise sauce. Don’t judge, I have tried making my own, it was good (and much more difficult) but when I crave Bernaise I want the Knorr green, red, and yellow packet.  I was shopping in Publix the other day and heard over the loudspeaker that the Aprons lady was making some kind of fish with a Citrus Bernaise.  Sounds delicious, I thought, so I changed up my menu a little to include it. I always have packet in the pantry as well as some sort of citrus in the fruit bowl. Here is what I came up with…

Chicken with Citrus Bernaise Sauce and Wilted Spinach

For the chicken

2 T olive oil

2 T lemon juice

1 t salt

1/4 t black pepper

1/2 t dried thyme

Mix together pour into a large zip lock bag  and add 4 – 6 chicken cutlets. Seal and refrigerate 30 min to 2 hours. Grill over medium high about 5 min per side depending on thickness ( alway check temp with a meat thermometer to ensure doneness).

Citrus Bernaise

1 package Knorr Bernaise Sauce mix

1 c milk

6 T butter

1T Orange Juice

1/2 T lemon juice

1/2 t zest from orange and lemon

fresh parsley (if desired)

Follow Bernaise sauce directions, then add juices and zest stir and cook about 2-3 minutes over low, add chopped fresh parsley if desired.

Wilted Spinach

1 T olive oil

2 bags washed baby spinach

1 t garlic

salt and pepper

heat oil in a large skillet over med high,

add spinach and garlic and cook over low heat, stirring constantly until spinach is just wilted. Remove from heat, do not over cook.

Wilted Spinach

Place spinach on plate, top with grilled chicken and ladle Bernaise sauce over top.

** This would be great with grill fish as well

Mexican Corn Salad

Mexican Corn Salad

A smokey, sweet, fresh and zesty side to go with steaks or grilled chicken.

Mexican Corn Salad

5 ears of fresh corn on the cob,husks and silk removed

1 T olive oil

1/4 c crema ( a mexican sour cream found in the dairy section) or 3 T sour cream and 1 T mayo

1/4 t smoked paprika

zest of 1 lime

juice of 1 lime

1/2 cup crumbled Queso Fresco ( mexican crumbling cheese) you could substitute Parmesan or Feta but use less as they are stronger cheeses

1 T chopped parsley or cilantro

salt and pepper

Preheat oven to 400 Drizzle olive oil over corn and rub in ensuring all sides are coated. Sprinkle with salt and pepper. roast for about 20 minutes or until corn starts to char.

Let corn cool so you are able to handle it and remove niblets from cob with a sharp knife. Mix together with remaining ingredients, season with salt and pepper to taste. Serve.

* you could grill the corn as well, that was my intention before it started pouring down rain.

Chicken, Peach, and Bacon Club with Basil Mayo

Honestly I am not a fan of sandwiches, too boring, but when my good friend mentioned something about a BLT using peaches instead of tomatoes, I was instantly intrigued. I thought what a great flavor combo, bacon and peaches hmmm….. Well I had chicken sandwiches on the menu anyway so why not go that extra step, peaches are after all in season. I am so glad I did, this was fantastic, the whole family raved about them and the combination of flavors is one of my newest cravings. These will make it on the menu several more times before peach season is over.

Chicken, Peach and Bacon Club with Basil Mayo

for 4 sandwiches

4 chicken cutlets

1 T balsamic vinegar

1 T + 1 t olive oil

1 T fresh chopped basil

1/3 c mayo

8 slices of whole wheat or your favorite bread, toasted

2 ripe peaches sliced thin

1/2-1 c arugula

5 sliced of cooked bacon

salt and pepper

Place raw chicken in a shallow dish, add 1 T oil and vinegar, season with salt and pepper, marinate 15 minutes and then grill or broil until done.

In a small bowl combine, mayo, basil, 1/4 t pepper and 1 t oil.

Assembly time!

Smear mayo on one slice of toasted bread

Add a layer of peaches

Add a layer of arugula

Add Bacon slices

Add a grilled chicken cutlet

Top with the other piece of toasted bread with more mayo if desired, cut in half and serve, delicious

Greek Chicken Pitas with Tzatziki Sauce

GREEK CHICKEN PITAS WITH TZATZIKI SAUCE

This is one of our favorite week night dinners, quick, easy and healthy.

For the chicken

1 1/2 lbs boneless chicken breat cutlets

1/2 T Greek seasoning

1/4 c olive oil

2T red wine vinegar

Combine all ingredients in a shallow baking pan (or large ziplock bag), add chicken and turn until well coated. Place in refrigerator for at least 30 min.

Grill over med heat about 3 minutes per side ( these were very thin cutlets, adjust your grilling time accordingly) or until no longer pink.

Cut chicken into bite size pieces or strips.

GREEK CHICKEN PITAS WITH TZATZIKI SAUCE

Serve over grilled pita with chopped cucumber, tomato, kalamata olives, lettuce, crumbled feta cheese and tzatziki sauce.

Tzatziki Sauce

1/2 c greek yogurt

1/2 c sour cream

1T chopped fresh dill

1/2 t minced garlic

1/4 cucumber finely grated

1/2 t salt

1/8 t pepper

Combine all ingredients in a small bowl and chill. Serve with chicken pitas, can also be served with cut up vegetables and pita chips as a dip.
