My good friend just brought me back a bunch of delicious peaches from Georgia and I wanted to use them before they started to go bad. I made these yummy muffins which are great for breakfasts, snacks or dessert.
Preheat oven to 375
2 1/2 cups all purpose flour
3/4 white sugar
1T baking powder
Pinch of salt
(Whisk these ingredients together in a bowl and set aside.)
1/2 c of melted butter (cooled slightly)
1c heavy cream
2 large eggs
1/2 of pure vanilla extract
1 1/2 c of fresh peaches peeled and diced
In a bowl whisk together melted butter, cream, eggs, water and vanilla. Get your dry ingredients and mix together in a large bowl and then make a small”well” in the middle, pour in the wet ingredients and stir by hand until incorporated but not over mixed (there may be some lumps). Add peaches and mix gently. Divide batter into 12 large muffin tins or 18 for smaller snack sized muffins, bake until golden brown about 20-25 minutes (check by inserting a toothpick into the muffin, it should come out clean)
I apologize about the photos, but we were actually camping. Our family went camping this past weekend at Myakka River State Park, just east of Sarasota, Fl. Packing food that will keep in a cooler for a couple days is always a little tricky, it can be brutally hot here in the afternoon. I made a large batch of chili that we made nachos, chili dogs and quesadillas out of, even considered putting it on our eggs one morning. It was perfect. I also pre baked a bunch of Mojo chicken legs and brought those ( I don’t like to bring any raw meat for fear of cross contamination) They were great for snacks, lunch and dinner, and easy to eat, no utensils needed. But like all good campers we needed to roast marshmallows and make s’mores. I always find that it is hard to keep the chocolate bars from melting in the heat, or if you put them in the cooler they get too hard and won’t melt in the s’mores, so that is where the Nutella comes in. I spread some Nutella on graham crackers and put them on a plate, then as we roasted the marshmallows we put them on top and added a top cracker and pulled the skewers out. Easy and so much less mess than traditional s’mores. I meant to bring bananas to slice and add too but I forgot. Doesn’t matter, they were still delicious. From now on I will be leaving the candy bars at home and bringing the jar of Nutella camping, besides it does double duty on sandwiches, apples and crackers for snacks.
Yes another pumpkin recipe, gotta get them in while I can. This one is a spicy earthy dip perfect on Pretzel Crisps or Pita Chips. Beer can be omitted just add more olive oil., or try your favorite style instead, stout, pumpkin beer etc..)Bring this to your next fall gathering.
Spicy Pumpkin Hummus
1 can garlands beans (chick peas)
1 can pure pumpkin
4 garlic cloves
2t chipotle chili powder
1/2 t cumin
1/2 t ground ginger
1 t cinnamon
1 t salt
3-4 T olive oil
2 T honey
1/4 c beer ( I used an IPA, Lancaster Brewing’s Hop Hog to be exact)
2 T lemon juice
1 T pepitas
Combine all ingredients except pepitas in a food processor. Whirl until smooth, taste, add salt or olive oil if necessary. Pour into serving bowl, top with 2 T olive oil, pepitas and a sprinkle of chipotle chili powder.
I saw an idea for S’mores popcorn on Pinterest but the link was broken so I don’t know who thought of this or who to give credit to. All I know is that I was shopping in my local market and these cute Honeymaid mini graham crackers were on sale, it made me think of the popcorn I saw so I decided to give it a try. The original picture on pinterest used Golden Grahams so if you have those on hand I am sure they would work just fine.
4 cups popped corn
1 1/2 cups mini graham crackers
1 1/2 cups mini marshmallows
1 cup chocolate chips
2 T half and half
Melt chocolate chips and half and half in a double boiler.
Put graham crackers, marshmallows and popcorn in a large bowl and toss with hands to mix together. using a spoon drizzle chocolate over mixture and stir until it is all incorporated.
Serve immediately. Would be perfect for kids sleepovers, and late night snacks.
