If you love Chicken Bryan at Carrabba’s you will love this dish, its my little copy cat recipe. To make it even more authentic add Sun dried tomatoes to the sauce, either way it is delicious.

Lemon Basil Chicken with Goat Cheese

4 Boneless, Skinless Chicken Breasts

1 T Italian Seasoning

Salt and Pepper

2 T Olive Oil

1 large shallot chopped fine

8 oz white wine ( I used Pinot Grigio)

2 oz Lemon Juice ( About 1 lemon)

1 T heavy Cream

12 T cold unsalted Butter cubed ( 1 1/2 sticks)

1 T chopped fresh basil

4  1 ” slices of goat cheese

Sprinkle both sides of the chicken breast with Italian seasoning and salt and pepper. Heat oil in a large pan then add chicken cooking about 4 min on each side. turn to low and cover until chicken is cooked all the way through, use a meat thermometer to check doneness. Remove chicken from pan.

Heat a small sauce pan over high heat. Add Shallots, wine and lemon juice, bring to a simmer and cook until liquid is reduced to about 2 T. Lemon Basil Chicken with Goat Cheese

Reduce heat to med high. Whisk in cream. Add Butter 1 T at a time whisking constantly and removing from heat as needed. Continue adding each tablespoon of butter and whisking until all have been added and the sauce is smooth. Season with salt and pepper

and stir in basil.

To plate chicken breasts, top with goat cheese, drizzle with lemon sauce, garnish with more basil if desired. Serve immediately.

Either of these recipes are great on their own but they also go great together. Impress your family and make their favorite take out entrees at home. 

Orange Glazed Chicken and Vegetable Fried Rice


Orange Glazed Chicken

1 1/2-2 lbs chicken ( use your favorite cut, thighs, wings, breast but leave the bones in and skin on)

Salt and pepper

1 c orange juice

1 T corn starch

1/2 c ketchup

2 T honey or brown sugar

2 t vinegar

2 T soy sauce

2 t hot sauce

Preheat oven to 450,  place chicken on a baking sheet and sprinkle with salt and pepper,  cook for 20 minutes skin side down, then turn and cook 20 minutes more. Chicken should have crispy skin and be golden brown. ( this is for thighs, cook longer for breasts, shorter for wings). Meanwhile add orange juice and cornstarch to a medium sized sauce pan and whisk together, add ketchup, honey, vinegar, soy and hot sauce and whisk again, bring mixture to a boil over med high heat and then turn to low, whisk mixture until thicken to a glaze consistency. Keep Warm.

Dip cooked chicken into glaze and coat well, place back on baking sheet and place back into the oven for 4 minutes or until chicken starts to get dark spots.

Serve with any remaining orange sauce.

 

Vegetable Fried Rice

4 c cold cooked rice (great for left over rice, or make the day before for best results)

1/4 c soy sauce

1/4 c rice vinegar

1 T sugar

2T oil

2 eggs, beaten

1 1/2 c broccoli florets

3/4 c sliced carrots

1/2 c chopped scallions

2 t chopped garlic

1 T minced ginger

1/2 c frozen peas

2 T chopped basil

 In a small bowl mix together, soy, sugar and vinegar. Heat 1 T oil in a large pan or wok, add carrots, broccoli and scallions, cook 2-3 minutes, add garlic, ginger and peas, cook 2 min more, add cooked rice and soy mixture. stir together and cook over med high heat until all rice is coated and brown, make a well in the center of the wok/pan and add remaining oil and beaten eggs, stir vigorously and then mix with rice mixture until egg is cooked, add basil and stir. Serve.

We recently traveled to Asheville, North Carolina for a weekend brewery crawl. The craft beer there is abundant and fantastic. What I also found was the famous Tupelo Honey Cafe, a Southern foodies dream. Well worth the 3 hour wait ( don’t worry they text you when you’re getting close on the list so you are free to explore downtown while you wait) this restaurant creates new southern comfort food by adding creative twists and fresh local and seasonal ingredients to their dishes. I was such a fan I bought the cook book and have not been disappointed with anything I have tried yet. This is the best roast chicken I have ever made. The herb stuffing seeps its flavor into all of the meat while it roasts, making each bite as comforting as a bowl of chicken soup. This is a great way  to use up extras from the herb garden as well.  I might even try to use this recipe with my Thanksgiving turkey. I highly recommend the cookbook and their website says that there will be a new one available this Spring, I am pre-ordering mine now.

Tupelo Honey Cafe’s Herb Roasted Chicken

1 3 lb chicken

2 c peeled and diced carrots

2 c diced celery

2 c diced sweet yellow onion ( Vidalias are best)

2 T chopped fresh Thyme

2 T chopped fresh sage

2 T chopped fresh Basil

2 T chopped fresh rosemary

2 t salt

1 t pepper

1/2 c olive oil

Pre heat oven to 350. Combine all ingredients together in a large bowl to make the stuffing.

Remove giblets from chicken cavity and place on roasting pan. Stuff the cavity with the mixture until full.  Add  left over stuffing with the giblets on the roasting pan and place the chicken on top, use the left over oil in the stuffing bowl to rub over the skin of the chicken. Place in the oven for 1 hr 40 min or until the juices run clear. Let the chicken rest for at least 15 minutes before carving. Use the stuffing and giblets from the roasting pan to make a pan gravy if desired.

Burrata cheese is popping up on menus all over town. What is it? Pure indulgence, it is fresh mozzarella cheese filled with shredded mozzarella cheese that has been soaked in cream. Here is my recipe for a delicious salad using the best that summer has to offer. Make sure you use good ripe tomatoes for this recipe.

Burrata Cheese Salad with Basil Honey Vinaigrette

makes 1 dinner or 2 appetizer portions

For the vinaigrette

2 T fresh Basil leaves

1 T honey

2 T balsamic vinegar

1 T olive oil

salt and pepper

Mix the above ingredients in a blender until smooth.

 

Salad

1 vine ripened tomato sliced

1 c spring mix greens

2 T thinly sliced radish

2 t sliced fresh basil

1 T pepitas ( roasted pumpkin seeds)

1 ball Burrata cheese

Layer greens, and tomatoes on a plate, sprinkle sliced radishes, pepitas and chopped basil on top. drizzle with Basil Honey Vinaigrette and sprinkle with salt and pepper.

This is a light and refreshing sangria that is perfect for summer and the festive colors make it the go to drink for the 4th of July. Want to make a pitcher for the kids, substitute the wine with white grape juice.

1  1.5 liter bottle of Pinot Grigio

1 cup water

1 cup sugar

1/4 c basil

1 c white grape juice

1 c strawberries washed and cut into quarters

1 cup blueberries

1/2 liter club soda

Place Strawberries and blueberries in a large pitcher, cover with 1 cup of wine and place in refrigerator for at least 1 hour- overnight.

Basil Berry Sangria

In a small sauce pan add sugar, water and 4 large basil leaves. bring to a boil and stir until sugar dissolves and then turn off heat and let cool. This is a basil simple syrup. It is great for many mixed drinks. I like it with Gin and tonics.

Add 1/2 basil simple syrup (straining the leaves out) the rest of the wine, grape juice, and club soda to the pitcher with the fruit.  Taste and add more simple syrup if needed ( This will depend on your tastes and the sweetness of your wine) Add some more fresh basil leaves. Serve over ice. Garnish with more basil and fruit if desired.

Easy Fresh Tomato and Basil Cream Sauce

Fresh is best. I hate to use canned or jarred soups and sauces unless I have to. The good news is tomatoes are coming into season here in Florida, which means better quality and cheaper prices. This sauce is so easy and so much better than jarred, try it once and you may never go back. Pour it on your favorite pasta or over chicken or pork.

Fresh Tomato and Basil Cream Sauce (serves 2, can be doubled)

1 T olive oil

2 ripe tomatoes chopped

salt and pepper

1/4 c chopped onion

2 t garlic chopped

3 T heavy cream

1 T fresh chopped basil

Sprinkle chopped tomatoes with salt and pepper. Heat oil over med/high in a large skillet, add tomato, onion and garlic and saute for about 3 minutes. Turn heat to low and add cream, cook 2 minutes more. Remove from heat and stir in fresh basil. Serve.

All the flavors of a supreme pizza in a lasagna.

Supreme Lasagna

1 package no cook lasagna noodles

1 lb ricotta cheese

1 T  chopped fresh oregano

1 T chopped fresh basil

2 eggs

1 t salt

1/4 t pepper

4 hot italian sausage links (I used Turkey sausage)

1 green pepper sliced

1 c sliced onion

1 c sliced mushrooms

1 large jar marinara sauce

2 c shredded mozzarella cheese

Preheat oven to 400. in a large bowl mix ricotta, oregano, basil, eggs, salt and pepper and 1 c shredded mozzarella cheese.  Cut open casing of sausage and squeeze meat into a large saute pan, cook over med high heat until no longer pink. Add onion and green pepper and cook until onion is translucent, add mushroom and cook until slightly soft. Drain any liquid from pan.

Using a large spoon, put approx 1/4 c of marinara sauce on the bottom of a 9×13 baking dish. Add one layer of noodles, then 1/3 ricotta mixture, a layer of sauce about 1 c and then 1/2 of the sausage mixture. Add another layer of noodles, 1/3 ricotta mixture, 1 c sauce, then noodles. The 1/3 ricotta mixture,  1 c sauce , 1/2 sausage mixture, and then noodles. Cover noodles with sauce and remaining mozzarella cheese and cover with foil. (The middle layer will be just cheese)

Bake for 30 minutes with foil on, then remove and cook 15 minutes more or until cheese is melted and golden. Let sit at room temperature at least 15 minutes before cutting.

I like the ease of my crock pot / slow cooker especially in the Summer when we are busy and I don’t want to get the house any hotter by turning on the oven. The problem is most slow cooker recipes are heavy and not that appealing in the warm Summer months. So here is a lighter recipe for the crock pot based on my love for the Chicken Bryan at Carrabbas

Chicken with Sundried Tomatoes, Lemon and Goat Cheese

Chicken with Sundried Tomatoes, Lemon and Goat Cheese

6 boneless skinless chicken thighs ( or 4 Breasts)

1 shallot chopped

zest of 1 lemon

juice of 2 lemons

1 t chopped garlic

2 T butter

2 c chicken broth

1 t salt

1/4 t pepper

1 t dried basil

1/4 c chopped sun dried tomatoes ( dried, not in oil)

4 oz goat cheese

1 T chopped fresh basil

Add chicken, shallot, lemon juice and zest, garlic, butter, chicken broth, salt, pepper, dried basil, sun dried tomatoes and 2 oz of the goat cheese to your slow cooker, cover and cook on high for 4 hours or low for 6 hours. Serve over pasta, noodles or rice and top with remaining 2 oz of goat cheese and fresh basil.

It always happens, you can go for weeks with nothing to do, and then you plan something and there are a million things to do on that same date. My husband and I planned our 20th anniversary trip to Iceland so I could see the Northern Lights, a bucket list item for me. It was a gorgeous, awesome, romantic, fun and adventurous trip. Everything I could ever hope for. But at that same time here in my home town was Food and Wine’s Buick Discovery Tour with my Simon LeBon of chefs Hugh Acheson. What, how could I miss Hughnibrow, the funny judge on my favorite show Top Chef?  Never fear, I have the greatest best friend in the world. She went, she’s not really a foodie but I think she’s converting, and guess what she got me.

Look he even spelled my name right! She gave me all her recipe cards (equivalent of baseball cards for foodies) from the event, including this delicious Basil Panna Cotta from Hedy Goldsmith. I love Panna Cotta and the addition of basil added a fresh and yummy flavor, I would also like to try it with mint some time. I did not make the Strawberry Consomme, we had some delicious fresh berries in the fridge so I just threw those on top, still tasted fantastic. Here is the recipe, the only thing I changed was the vanilla bean, I did not have one so I just added 1tsp of vanilla extract instead. One thousand Thank Yous to Hugh and my Bestie, I think I will frame my recipe card and put it next to my framed Madison Square Garden Duran Duran ticket.

Blueberry and Basil Salsa

I love the combination of blueberries and basil, so when I was asked to make salsa for a wine and cheese party, I decided to add a little twist. This salsa is great with goat cheese, brie, blue cheese or even cream cheese, serve over top the cheese on a cracker or bread. This would also be great on chicken or fish.

 Blueberry and Basil Salsa

1 cup fresh blueberries

1/4 c red onion

5 large fresh basil leaves

1 tsp honey

1 tsp lime juice

1/2 tsp salt

Add all ingredients to a blender or food processor and puree until salsa consistency.
